Prepare jars with lids. Rinse them with baking soda water and sterilize. Dry and chilled jars are filled with prepared herbs in thin layers, sprinkling each layer with rock salt. "Extra" and iodized salt are not suitable. Good quality salt should be used. Squeeze the mixture in jars so that no empty spaces remain. The filled jar is closed with a lid and placed in the refrigerator.
Drying
This is a very popular way. Especially if salt is not desired. Dark glass jars are needed here. Jars with lids must be sterilized. Onions are sorted, washed, dried. The onion prepared in this way, without the white part, is cut into small pieces. Leave on a napkin until dry in the shade, without drafts. Make sure that there is not a drop of moisture. Otherwise, in a closed jar, the entire stock may be moldy.
Dried onions are placed in jars. The jars are hermetically sealed and stored in a cool place. For complete safety of the crop, the jars can be wrapped in dark paper. It must be remembered that when filling a jar with dry onions, it should not be compacted. Onions can turn to dust.
Freeze and green onions
Frost saves 90% of all vitamins. To freeze onions, they must be sorted, washed, dried and chopped along with the white parts. Then put the raw materials into prepared bags and place them in the freezer. For freezing, bags, plastic and cardboard containers are used. The containers are also washed, disinfected and dried.
